Snickerdoodles

Snickerdoodles are some of our favorite cookies.

Snickerdoodles


1/2 cup butter or margarine, softened
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups all-purpose flour
2 tsp. cream of tartar
1 tsp. soda
1/4 tsp. salt
2 tbsp. sugar
2 tsp. cinnamon

Heat oven to 400 degrees. Mix thoroughly butter, shortening, 1 1/2 cups sugar and the eggs. Blend in flour, cream of tartar, soda and salt. Shape dough by rounded teaspoonfuls into balls. Mix 2 tablespoons sugar and the cinnamon; roll balls in mixture. Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until set. Immediately remove from baking sheet. Yield: About 6 dozen cookies.

Porcupine Meatballs

This recipe is from my mother-in-law Jo White.

Porcupine Meatballs

Meatballs:
1 lb. hamburger
⅓ cup rice
1 small onion, chopped
1 egg, beaten
2 tbsp. chili powder
1 tsp. salt
dash of pepper
Sauce:
1 can tomato soup
2 soup cans water
1 tsp. salt
1 tbsp. chili powder

Combine sauce ingredients in a large saucepan and bring to a boil. While waiting for the sauce to boil combine meatball ingredients in a large bowl and mix together thoroughly. Roll into balls the size of a walnut. Drop meatballs into boiling sauce and cook on low heat uncovered for 1 hour. Stir occasionally. Serve with mashed potatoes or rice.
